Restore Content Overridden By Restoring a Note

I was just making an essential outline at the base of a master note— I dropped my iPhone and in the process a line of text deleted. So I went into history to try to simple restore it since “shake to undo” did not do anything as the app also exited when I dropped the phone.
Upon seeing the old version in the restore pane I was not able to scroll at all to view it— thinking it was stuck and I needed to hit restore to scroll to the bottom of what I had just written (as I had been working for 30min), I hit restore. I then discovered that— no, that was just a version of the note with none of what I had just worked on. It was a version from 9:11pm I had dropped my phone at 9:45. I am connected to LTE and on the internet and syncing is on. However when I initially went into restore just trying to gain back one line of text and moving the bar over as little as it would go, it took me to 9:11pm.
Now in trying to restore 1 line of text it appears I have deleted the entire 30+ min work session of essential outline! …I did not think this would be a problem considering any basic sane recovery system for workflow has a Time Machine like option where if you go backwards to view old versions u can still go forward to the most recent. Now looking in the recovery history the only most recent version there is for 9:12pm..??????? (It’s 10:14 bc it took me 30min just to get logged in here to post / contact support)
what is going on and where is my content. Am I seriously to believe that for this kind of app reliability wise after 40 min of writing while plugged into the internet nothing I wrote synced at all AND That there is no way to go back forwards in time on note restoration, to go back to the most recent edits from a restore (AND that you can’t even view the previous version of a note to restore before hitting restore and deleting everything with no warning you will lose your content and need to manually copy it???)
Where is my content and how do I get it back? Is this really how the app is set up after all of these years without even a basic “undo” icon at the top?
please help I need that content as I cannot remember it executive function wise, and it’s why I wrote it down in a quick accessible note taking app in the first place.

Hi. Just to be clear, are you using the iOS Simplenote app loaded on your iPhone, or the Simplenote web app (app.simplenote.com) in a browser?
